Makes enough for 10 servings
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
For the Citrus Syrup: Combine the listed items inside a pan, heat until it reaches a simmer, agitating to dissolve. After that, remove from the burner and leave to reach room temperature completely. Transfer into a sealable bottle, seal and store in the refrigerator, where it will keep for around a month.
To make Premix: Pour the specified spirits and syrup into a sizeable container, leave to sit for one hour, then strain best through cheesecloth, making it fully clarified.
To serve: Pour 85ml from the batch mix into a stirring glass filled with ice, and stir carefully for one minute until cold. Strain into a chilled martini glass or equivalent, garnish with the cranberries and complete it with a light spray with the mandarin essence over the drink.
